Baby eels. Our elvers are fresh, weigh 1 gr. on average, measure around 8 cm. and are three years old, which is the time it takes them to cross the Atlantic and reach the rivers of the Cantabrian coast. They are captured at the estuaries of these rivers on new moon nights and processed following a traditional technique handed down from generation to generation.
